ABOUT THE COMPANY
Robot - Coupe has been around since 1960 and has always specialized in the development and production of professional electromechanical kitchen equipment. Currently, the company offers 8 groups and 70 equipment models for enterprises of various formats:
· cafes-bars-bistros-restaurants-hotels;
· canteens of educational institutions, enterprises and the army;
· food service units of hospitals and nursing homes;
· small food production facilities – meat and sausage, fruit and vegetable, confectionery, including the production of chocolate products;
· factory kitchens of catering companies and supermarkets.
With a clear focus on its chosen field, the company constantly refines its models, develops and introduces new products, and invests in the development of its own production. There are five main equipment groups: vegetable slicers, cutters, processors, blikkers, and hand mixers.
HAND MIXERS
Robot - Coupe Company began developing its hand mixer line in 1997. This line currently includes 17 models and is experiencing the highest growth rate among other equipment groups (60% in Russia in 2005). Similar growth is also observed in other markets.
Robot - Coupe hand mixers have a number of technical advantages.
Important! The mixer's working part (with the blade) can be easily cleaned after use by placing it in a container of water and running the mixer at maximum speed for a few seconds. The strong turbulence will remove any food debris from the surface. However, it is recommended to periodically (e.g., once a week) completely wash the working parts, removing the blade.
· Smooth speed control in models with indexes V. V. , Combi and FW allows
select the optimal operating speed.
· The protection system will turn off the mixer in case of overheating to prevent damage to the motor.
· The automatic speed control system maintains the set speed: at the beginning of cooking, when the product is thick, the speed does not drop; later, when the product has "melted" and the load on the motor has decreased, the speed does not increase.
· The company's special pride is its whisk gearbox. It boasts the longest continuous operation life in its class. All gears and their fasteners are made of metal. For comparison, here are the results of a Robot - Coupe test , where the whisk mixed 22 liters of mixture (12 kg of flour and 10 liters of oil). Comparable mixers with two attachments (SAMMIC , DITO , DYNAMIC , IRIMAR , and ROBOT - COUPE ) of comparable power were used . The whisk runtimes before failure were respectively: 30 minutes, 32 minutes, 19 minutes, 30 minutes, and 600! hours (8 hours per day).
Hand mixers are inexpensive, compact kitchen machines that are ideal for certain tasks.
The function of the whisk is to beat and stir.
In Ukraine, mixers with whisks are primarily used for the quick and easy preparation of mashed potatoes. The principle is the same as with a household mixer: mashing and whisking the potatoes in a bowl. Unlike pureeing, a mixer offers several advantages:
- we use only one container in which we have just boiled potatoes.
- during the cooking time (1-2 minutes depending on the volume), the potatoes do not have time to cool down, i.e. they do not require additional heating before serving.
- the process is hygienic.
- the machine does not take up space, after work it is hung on the wall using the mount that is included in the kit.
The only limitation is that it is recommended to prepare no more than 20 kg of puree at a time (80-100 servings). To prepare a larger quantity, you will have to cook 20 kg several times.
The whisk is also used for making omelettes , various mixtures (for example, egg-mayonnaise for potato casserole), pancake batter and fritters .
In confectionery production, a mixer with a whisk can replace a planetary mixer for whipping cream, whipping cream, egg whites, and making meringues . Unlike most planetary mixers, hand mixers with a whisk have a speed of up to 1800 rpm and allow some tasks to be performed up to 5-6 times faster. The advantages of a mixer are the same: lower cost, takes up no space, and can be used in any convenient container.
The function of a mixer with a knife (blender) is chopping and mixing.
The main use of mixers is the preparation of sauces and pureed soups (cream soup, pureed soup). In contrast
Unlike bar blenders and cutters, a mixer allows you to work with large volumes (from 100 ml to 300 liters!). Each operation takes no more than 4-5 minutes. Therefore, mixers are recommended for canteens, restaurants offering business lunches or banquet services, as well as for catering companies and fast-food kitchens.
The mixer's advantages include low cost, compact size and easy storage, ability to work in any convenient container, quick preparation of large quantities, and the hot product not having time to cool down and ready to serve immediately.
Important! Unlike a whisk, you don't need to hold a mixer. Simply place the mixer at an angle in the bowl, leaning it firmly against the side or securing it in a special holder (available separately), ensuring the product reaches the blade. The high blade speed and the resulting turbulence will draw the liquid product under the blade, quickly blending all the ingredients (meat, vegetables in soup) evenly.
Examples of preparations include bouillabaisse fish soup (a pureed soup made from different types of fish) , bolognese sauce (a tomato sauce based on broth with herbs, spices and minced meat) , pancake batter with spinach , where a mixer with a knife is used to simultaneously mix the batter and chop the spinach, and chop berries for sauces, jams, and making fruit drinks.
BLIXERS
These cars were created by the company Robot - Coupe based on a study of the needs of the company SODEXO (global
(a leader in catering) in the preparation of pureed foods in hospitals, nursing homes, and care homes. Where soups, vegetable and fruit purees, pâtés, and other mixtures with a fine, smooth consistency were required, labor-intensive preparation was traditionally used. The product was first chopped in a vegetable slicer or meat grinder, then the raw or cooked product was mashed by hand or with a masher several times to achieve the desired fine consistency, and then, if necessary, thinned with juice, milk, or broth.
The advent of the Blixer (patented name Robot - Coupe , meaning "blender-mixer") made it possible to quickly and conveniently prepare such products in one operation. Unlike a cutter, a Blixer allows for more efficient work with liquid and semi-liquid products (loading the bowl up to 2/3 instead of 1/3 in a cutter). Blixers have a different shape and a finely serrated knife edge for finer chopping. Even the junior Blixer models have a speed of 3000 rpm, which allows cooking twice as fast as in a cutter, where junior models have 1500 rpm and achieve greater chopping. The Blixer has a removable scraper that allows you to clean the walls of the bowl and lid directly during operation and return the products to the working area to speed up cooking. For the preparation of puréed products in large quantities in hospitals, it is possible to equip large cutters, starting with the R 23 model, with a Blixer kit. kit (blixer knife, removable scraper) to turn them into blixers.
