Teppanyaki is a style of cooking in which the chef cooks ingredients on a wide iron griddle (teppan) next to the diners, after which the hot dish is immediately transferred to their plates. The name comes from the words teppan (Japanese: 鉄板?, literally "iron sheet") and yaki (Japanese: 焼き?, literally "grill" or "fried"). In modern Japanese restaurants, the chef stands over a hot plate (teppan) next to the diners. Pieces of beef, fish, or vegetables are cooked in front of you and then immediately transferred to your plate. Typical ingredients for Western-style teppanyaki include beef, chicken, and vegetables. The Japanese style, however, emphasizes cooking seafood in vegetable or animal oils. Teppanyaki is often accompanied by artistic techniques, such as juggling dishes or throwing food into the air, etc.
