A bain-marie (from the French word "marmite" meaning "saucepan, pot") is a rectangular, oval, or round container with a low or medium profile and a lid, made of aluminum/stainless steel, designed for storing food, semi-finished products, and ready-to-eat foods, and made of stainless steel or silver for preparing and/or keeping food warm (including deep-cut ones). A special feature of heating and storing prepared dishes in a bain-marie is that the gastronorm container containing the finished product is heated by steam. This prevents the food from burning, drying out, or overheating, and keeps it fresh throughout the entire storage period. Tabletop bain-maries come in a variety of sizes and shapes. The most common option is a bain-marie for 3 GN 1/3 (150) containers. Tabletop bain-maries for 2 and 6 gastronorm containers are also common.
