Dry-aging meat is a aging process designed to achieve optimal flavor, a refined, unique, intense aroma, and tenderness in beef using a long aging period. It involves evaporating moisture and softening the connective tissue through fermentation. Enzymatic action results in tender meat, and forced ventilation allows it to lose up to 30% moisture.

This process is ensured by constant control of temperature and humidity and uniform air ventilation.

It is very important to age meat in a safe environment.

Special refrigerated cabinets are used for maturing (aging) meat.

Controlling such cabinets is quite simple, all important moments are already programmed and the cycles follow each other automatically.

The cabinets are equipped with thermostats to maintain the set temperature. UV lamps provide a bactericidal effect.

Meat aging cabinets can have a solid door or a glass door, allowing for the display of the product being prepared. They come in various capacities and are equipped with shelves, racks, and hooks, depending on the model.
