Thai ice cream, or as it is also called, "fried ice cream", is prepared using special equipment - a freezer for producing rolled ice cream.
While this method of preparation has nothing in common with frying pancakes, it's not entirely unrelated. The prepared ice cream mixture is poured onto a surface cooled to -15 to -20°C (-15 to -20°F). Berries or fruit can be added. The mixture is then stirred and crushed with spatulas. As it cools, it turns into a frozen pancake, after which the operator uses special scrapers to cut it into ice cream tubes.
The cost of such equipment is significantly lower than that of a soft-serve ice cream freezer or a batch freezer, while the cost of the finished "fried ice cream" is 2-3 times higher than, for example, a serving of soft-serve ice cream!
