A freezer is a device designed to make ice cream by cooling, aerating, churning and freezing a liquid milk or fruit mixture.
Soft-serve ice cream freezers allow you to prepare and sell finished products directly at the point of sale. Soft-serve ice cream has a creamy consistency and significantly surpasses hardened ice cream in flavor.
The Ukrainian soft ice cream market is dominated by machines produced by companies such as Taylor , Elektrofreese (USA), Carpigiani , Frigomat (Italy), as well as devices from Chinese manufacturers Spaceman and Oceanpower.
Freezer performance is affected by the refrigeration unit's capacity, the cylinder volume, and the presence of a pump. A pump, a device that forces air into the freezer's cylinder and accelerates the flow of the mixture, gives ice cream an airy, creamy consistency. An equally important advantage of using a freezer with a pump is its cost effectiveness. A freezer with a pump produces ice cream with 80-100% overrun, while without one, it only produces ice cream with about 40%. The more air in the portion, the more profitable the business is for the owner selling ice cream by the volume.
During freezer operation, the refrigeration unit generates a significant amount of heat, so the choice of cooling is crucial: air (fan) or water. Low-capacity freezers use air cooling. These units require adequate space around the body. Water cooling reduces heat and noise during the ice cream making process. Water cooling is used on high-capacity freezers.
With proper care and maintenance, the freezer's service life is over 10 years. To ensure long-lasting service, follow all operating instructions.
According to SES standards, the freezer should be washed once every two days. All freezer cavities are rinsed with warm water (with added detergent) until the water runs clear. The freezer is then rinsed with a warm detergent solution for 5-10 minutes, while the reservoirs and all mechanical parts are cleaned with a brush. After rinsing, the freezer parts that come into contact with the ice cream are treated with a disinfectant solution and rinsed with clean water to remove any detergent and disinfectant residue. When reassembling the freezer components after washing and disinfection, all moving and sealing parts are lubricated with petroleum jelly to prevent freezing and premature wear.
During freezer maintenance, the operating mode and settings of the protective electrical equipment and automation devices are checked, the condition of the V-belts is inspected, and they are tensioned if necessary. The roller axles are lubricated with acid-free machine oil. The refrigeration system is checked for leaks, any leaks are repaired, and refrigerant is added if necessary. The quality of the ice cream produced is determined. If the ice cream is too soft, the thermostat is adjusted to a lower temperature. If the ice cream is too hard, the thermostat is adjusted to a higher temperature.
