Coffee is prepared by extracting natural essential oils (caffeol) from ground coffee beans. It is this caffeol that gives this invigorating drink its incomparable aroma and flavor. Professional coffee grinders are the equipment that directly determines the quality of the coffee. Initially, a mortar and pestle were used to grind coffee beans, but this process was very labor-intensive and not everyone could handle it. To simplify this process, the manual coffee grinder was invented, rotating discs or burrs with a lever. Modern coffee grinders operate on the same principle, but grinding time has been significantly reduced thanks to an electric motor. They use special burrs, either conical or flat, to grind coffee. The former is preferable because it does not heat the beans during grinding, and the resulting powder does not stick to the burr surface.

Knife-type coffee grinders (rotary coffee grinders).
Their operating principle is simple: a metal blade rotates at high speed in a container, chopping the beans. The resulting grind is uneven. The degree of grinding is controlled by the grinding time. With prolonged grinding, the grind becomes so fine that it is suitable only for making oriental-style coffee. The main drawback of these models is the difficulty in adjusting the grinding degree, as it depends solely on the grinding time. However, these grinders are inexpensive, and their design is reliable and simple.
Burr coffee grinders.
The beans are ground using special cylindrical or conical burrs, typically made of stainless steel, though models with ceramic burrs are also available. The advantage of burr grinders is their ability to provide a consistent grind, the fineness of which is easily adjusted.
Conical burr coffee grinders are designed for use in high-traffic establishments. The conical burrs, 49-120 mm in diameter, nest one inside the other, offer a large working surface.
Hopper-type batch grinders (with a mechanical dispenser) are used to grind a specific type of coffee for a specific coffee maker. These grinders have a hopper where the grounds are ground, and then the barista draws the coffee from this hopper into the holder (porta) by pressing a special paddle. Each press releases 5 to 10 grams of coffee. The hopper typically contains a sensor that turns off the grinder when the hopper is full. A mechanical or electronic dose counter is often installed on the hopper, which records the number of presses of the paddle.
Direct-grinding coffee grinders (electronic dosing). These grinders are also designed to dispense coffee into a holder (porta), but they don't have a hopper, as grinding occurs immediately before use. This is accomplished by programming the amount of coffee to grind per serving. Additionally, these grinders typically feature a continuous grinding function, meaning the grinder grinds the coffee as long as the button is pressed.
Bag-type coffee grinders are used for grinding large volumes, typically for selling ground coffee by the pound. In these grinders, the ground coffee is fed through a special tube directly into a bag, which is secured to the grinder with a clip.
Grind settings are either millimetric or micrometric. Modern professional coffee grinders typically offer multiple grind settings (from 6 to 14), as different coffee beans require different particle sizes to prepare different beverages. From 400 to 1500 g. If coffee consumption is not high, a large capacity is not necessary, as the coffee will "die out." If a burr grinder is purchased for a high-traffic establishment, it is better to choose a grinder with a larger ground coffee hopper.
