How to choose a coffee grinder? Classification and recommendations.

How to choose a coffee grinder? Classification and recommendations.
12 December 2008 - 12:12 Views:13396

Coffee is prepared by extracting natural essential oils (caffeol) from ground coffee beans. It is this caffeol that gives this invigorating drink its incomparable aroma and flavor. Professional coffee grinders are the equipment that directly determines the quality of the coffee. Initially, a mortar and pestle were used to grind coffee beans, but this process was very labor-intensive and not everyone could handle it. To simplify this process, the manual coffee grinder was invented, rotating discs or burrs with a lever. Modern coffee grinders operate on the same principle, but grinding time has been significantly reduced thanks to an electric motor. They use special burrs, either conical or flat, to grind coffee. The former is preferable because it does not heat the beans during grinding, and the resulting powder does not stick to the burr surface.
Our full range of coffee grinders is available in the "Coffee Grinders" section of our store. Coffee grinders can be classified as follows:
Knife-type coffee grinders (rotary coffee grinders).
Their operating principle is simple: a metal blade rotates at high speed in a container, chopping the beans. The resulting grind is uneven. The degree of grinding is controlled by the grinding time. With prolonged grinding, the grind becomes so fine that it is suitable only for making oriental-style coffee. The main drawback of these models is the difficulty in adjusting the grinding degree, as it depends solely on the grinding time. However, these grinders are inexpensive, and their design is reliable and simple.

Burr coffee grinders.

The beans are ground using special cylindrical or conical burrs, typically made of stainless steel, though models with ceramic burrs are also available. The advantage of burr grinders is their ability to provide a consistent grind, the fineness of which is easily adjusted.
Professional coffee grinders offer a variety of additional features and can grind large quantities of coffee beans at once. They are all burr-type, most often with flat burrs; the diameter of these burrs determines the machine's productivity. Professional models are used in restaurants, cafes, and specialty stores. It's best if the burrs are made with a titanium coating.
By type of knives.
Coffee grinders with flat, parallel burrs are designed for use in establishments with low to medium traffic. The burrs are flat, 50-80 mm in diameter, arranged parallel, and have a small working surface.

Conical burr coffee grinders are designed for use in high-traffic establishments. The conical burrs, 49-120 mm in diameter, nest one inside the other, offer a large working surface.
Standard (flat) blades should be replaced every 600 kg of grounds. Conical blades should be replaced every 1,000 kg of grounds. Consult the manual to find out which type of blade is installed in your grinder.

In any case, the knives must be replaced every time the following occurs:
a) freshly ground coffee (at least 50 grams), collected in the lower hopper of the coffee grinder, warm to the touch;
b) greasy droplets appear on the espresso foam (this happens because the coffee was squeezed and not ground properly);
c) the coffee looks and feels like a powdery mass;
d) the ground coffee residue in the filter after brewing is damp, even if the correct dose was used.
By productivity : economical, low-productivity 3-9 kg per hour; expensive, high-productivity 20-73 kg per hour. The larger the millstone diameter, the higher the machine's productivity.
By rotor speed. High RPM (900-1400 RPM) Low RPM (400-600 RPM). The higher the speed, the faster you get ground coffee, but speeds above 1000 RPM can cause the beans to burn, which in turn will result in an excessively bitter drink.
About dosing ground coffee.
Hopper-type batch grinders (with a mechanical dispenser) are used to grind a specific type of coffee for a specific coffee maker. These grinders have a hopper where the grounds are ground, and then the barista draws the coffee from this hopper into the holder (porta) by pressing a special paddle. Each press releases 5 to 10 grams of coffee. The hopper typically contains a sensor that turns off the grinder when the hopper is full. A mechanical or electronic dose counter is often installed on the hopper, which records the number of presses of the paddle.

Direct-grinding coffee grinders (electronic dosing). These grinders are also designed to dispense coffee into a holder (porta), but they don't have a hopper, as grinding occurs immediately before use. This is accomplished by programming the amount of coffee to grind per serving. Additionally, these grinders typically feature a continuous grinding function, meaning the grinder grinds the coffee as long as the button is pressed.

Bag-type coffee grinders are used for grinding large volumes, typically for selling ground coffee by the pound. In these grinders, the ground coffee is fed through a special tube directly into a bag, which is secured to the grinder with a clip.

Grind settings are either millimetric or micrometric. Modern professional coffee grinders typically offer multiple grind settings (from 6 to 14), as different coffee beans require different particle sizes to prepare different beverages. Recommendations for grinding a professional coffee grinder can be found here .

By volume of the ground coffee hopper:
From 400 to 1500 g. If coffee consumption is not high, a large capacity is not necessary, as the coffee will "die out." If a burr grinder is purchased for a high-traffic establishment, it is better to choose a grinder with a larger ground coffee hopper.

When choosing a professional coffee grinder, it's worth paying attention to additional features such as a timer, automatic coffee dosing, manual or automatic grinder shut-off, the presence and design of a ground product dispenser, and overheating protection.
Professional coffee grinders vary significantly in price across different models. Their cost is influenced by a variety of factors, including the machine's design, brand, performance, the presence of a doser, the type of operation (automatic or manual), the presence of a coffee pod forming function, a timer, and more.
Among the well-known brands, the following can be highlighted:
Fiorenzato is an Italian brand recognized in the coffee industry as a symbol of quality. Their professional coffee grinders are unrivaled in terms of reliability and appearance. Macap is an Italian company founded in 1930. Currently, Macap grinders are exported to over fifty countries, thus demonstrating their reliability. Quamar is another Italian company that produces professional equipment for the food service industry. Ease of use, power, and reliability are the priority areas of this brand's development. Nuova Simonelli is an Italian company founded back in 1936. A constant pursuit of excellence and meticulousness, as well as significant investments in new developments, have led to outstanding results and performance: the brand became an official representative of the World Barista Championship and received the prestigious Compasso d'Oro award for design innovation.
