ABOUT THE COMPANY

The Robot - Coupe company has been around since 1960 and has been specializing in the development and production of Professional electromechanical kitchen equipment. The company currently offers 8 product groups and 70 models of equipment for businesses of various sizes:

·          cafes-bars-bistros-restaurants-hotels;

·          canteens of educational institutions, enterprises and the army;

·          food service units of hospitals and nursing homes;

·          small food production facilities – meat and sausage, fruit and vegetable, confectionery, including the production of chocolate products;

·          factory kitchens of catering companies and supermarkets.

 

With a clear focus on its chosen field, the company constantly refines its models, develops and introduces new products, and invests in the development of its own production. There are five main equipment groups: vegetable slicers, cutters, processors, blikkers, and hand mixers.

CUTTERS

These are versatile kitchen machines that allow you to quickly (up to 4 minutes per operation) and conveniently prepare a large number of dishes and can replace many other kitchen machines. Robot - Coupe offers 20 models of tabletop and floor-standing cutters with bowl volumes from 2.5 to 60 liters .

All cutters have a number of technical and design advantages:

·          Powerful asynchronous ventilated induction motors. Just like those used in vegetable cutters, these motors are brushless, low-noise, and maintenance-free.

·          Direct drive allows for maximum use of motor power, as power is not lost to friction and heat in the gearbox, and there is no wear on the gearbox.

·          The low position of the knife (the lower blade is directly on the bottom of the bowl) allows you to work effectively even with small quantities of product.

·          The shape and position of the knife blades ensures effective mixing of the product, thus ensuring perfect uniformity of preparation.

·          The transparent lid allows you to monitor the cooking progress. A hole in the lid allows you to add ingredients directly while working.

·          The bowls have convenient handles for carrying.

·          All models feature an effective safety system: in addition to turning the machine off when the lid is opened, a forced blade stop function is also implemented.

·          The basic speed of 1500 rpm is most efficient for most applications. Models with an additional speed of 3000 rpm cut cooking time in half and also provide a finer grinding result, which allows for additional applications (for example, making powdered sugar and marzipan). Models with the V. V. index allow smooth speed adjustment from 300 to 3000 rpm.

·          5- and 6-liter cutters have an R - mix function for gently mixing additional ingredients (for example, pieces of seafood into the main mass of fish soufflé) in reverse with a movement of the knife.

·          Large models, starting from 8 liters, may have additional accessories: a small bowl for additional preparations "at the last minute"; a Blixer set A kit consisting of a special knife and scraper for converting a cutter into a blikzer; a double-walled bowl ("jacket") for heating or cooling the product during operation, and an R - VAC set for processing the product under vacuum.

Main applications of cutters.

Tabletop cutters are used as auxiliary kitchen machines in food service establishments of all sizes, from small cafes to factory cafeterias and industrial kitchens (food processing plants, salad and meat shops, and catering). Cutters offer a wide range of options, allowing each business to choose the one that best suits its needs.

Working with meat.

The cutter can replace a traditional meat grinder and has a number of advantages:

  • Each operation takes no more than 4 minutes. This is especially convenient in cafes and restaurants, where there's no need to stock up on minced meat; the meat can be minced very quickly just before cooking.
  • The meat is minced, which is preferable for many dishes, including national cuisines;
  • The degree of mincing depends on the operating time: the longer the mincing time, the finer the result. Therefore, the cutter is easily used to produce coarse, medium, and fine minced meat, as well as fine mincing (quenelles, soufflés, pâtés). It's also convenient for preparing complex meat dishes, such as roulades with layers of different meats at varying degrees of mincing.
  • When working with fish, coarse grinding is also preferable for some dishes, such as fish pies or fish cakes. Fine grinding is necessary for making fish terrines and soufflés. This cannot be achieved in a meat grinder.
  • If several types of meat are used, they are mixed evenly during grinding.
  • While preparing the minced meat, you can add water to the cutter bowl to make the minced meat more tender.
  • You can grind both fresh and frozen meat in a meat cutter. To do this, you need to cut it into small pieces and defrost it briefly (so that the surface thaws by 2-3 mm). Grinding frozen meat produces large, crisp pieces.
  • The bowl, knife and lid are easy to clean.
  • In a cutter, you can easily prepare other ingredients for a meat dish: crush bread (including breadcrumbs) for adding to minced meat and for breading, chop herbs, onions, garlic, cheese, prunes, vegetables, nuts for the filling, and prepare a variety of sauces.

Sauces, soups, side dishes.

It is easy to prepare any sauce in a cutter, since the machine chops the ingredients while mixing and Whipping. For example, pesto sauce is made by simultaneously chopping and mixing green basil, pine nuts, Parmesan cheese, garlic, and olive oil. Mayonnaise sauce is made by whisking egg yolks with mustard, gradually adding vegetable oil through a hole in the lid of a food processor. The cutter allows you to prepare even a small amount of product   (sauce for 1-2 servings, dough for 2-3 pancakes) thanks to the low knife position.

Confectionery.

 

Cutters are often used for quickly and easily grinding any nuts . The degree of grinding depends on the time the machine is running – the longer the grinding time, the finer the result. The resulting mass contains various fractions (due to the fragility of the nuts, crumbs are formed), just like large specialized nut grinders. The fractions are easily separated using a sieve. Nuts are used for decorating confectionery, mixing into dough, and as fillings. Large pieces of fruit, such as peaches, ground in a cutter, can also be used as fillings.

Chocolate products are made using a chocolate mass called ganache. It's also easy to make in a cutter. The chocolate is chopped into crumbs, then a small amount of hot cream is added and mixed for 2-5 seconds until a thick, smooth chocolate mass forms. Besides the speed, the convenience of making ganache in a cutter is that the chocolate mass contains virtually no air bubbles and is ready for molding almost immediately. Chopping fruits and berries followed by heat treatment makes it possible to make jams and preserves . Because a cutter can mix any type of dough, it's easy to make muffins, pancakes, sponge cakes, and cookies . For decorating pastries, you can chop dried apricots or candied fruit, or create wafer or chocolate crumbs . When beautifully serving cakes in a cafe, you can quickly prepare berry or fruit sauces .
