    Description. Proofing cabinet MEC L 834.1B MU

    The MEC L 834.1B MU distance cabinet with digital control is equipped with a steam humidification system and has the ability to smoothly adjust the temperature from 0°C to 60°C. Proofing cabinets are designed for proofing quick-frozen semi-finished products made from yeast dough. Proofing is a controlled fermentation process of dough before baking. The carbon dioxide released during this process loosens the dough, increasing its volume by 2-2.5 times. Proofing should be done in an atmosphere with a temperature of 33-40 degrees Celsius and a relative humidity of 75-80%. Water is poured into a pull-out tray with a sponge in the soft part of the proofing cabinet; a heating element located underneath heats the water in the tray and causes it to evaporate. This creates a humid, warm environment inside the cabinet, necessary for the proofing of yeast-raised products. During proofing, semi-finished products are kept in the proofing cabinet for 60 minutes at a temperature of 40-45 degrees Celsius; during this time, the yeast-raised products "rise," increasing in volume by approximately 1.5-2 times. Visual monitoring of the process is easy, as it is carried out through a glass door. The equipment's design ensures uniform temperature distribution throughout the entire cabinet.
