Description. Unox XL135+XC133 Proofing Cabinet on Wheels
The cabinet is no longer in production, we recommend an equivalent. For ovens XF 135/XF 119/XF 115. Unox specializes in producing a wide range of affordable convection ovens and proofing cabinets for ovens. Proofing is a controlled fermentation process of dough before baking. The release of carbon dioxide causes the dough to leaven, increasing its volume by 2-2.5 times. Proofing should be carried out in an atmosphere with a temperature of 33-40 degrees Celsius and a relative humidity of 75-80%. Proofing chambers for ovens • maximum temperature in the proofing chamber + 50°C; • possibility of permanent connection to water; • button for supplying water to the working chamber; • increased water evaporation capacity; • independent management; • glass door to control the proofing process; • door with seal; • models XL 135, XL 195 and XL 505 do not have a separate control panel and are recommended for sale as a set: models XL 135, XL 195 with ovens of the XF series (models Classic and Dynamic); XL 505 - with ovens of the XB series.
