Description. 12-level proofing cabinet RT-12
The 12-tier RT-12 proofer is a versatile cabinet with universal guides for both 600x400mm baking sheets and 1/1 GN pans. It fits virtually any imported combi oven.
- Made entirely of food grade stainless steel.
- Pull-out tray for collecting moisture.
- Universal guides - pastry tray 600x400 or gastronorm container GN-1/1
- Doors made of 6mm heat-resistant glass.
- Adjustable telescopic supports 1'' 1/2 (AISI 304 steel, can be dismantled)
The number of baking trays that the proofer should accommodate should exceed the number of baking trays in the oven by 1.5-2.0 times.
Proofing is a controlled fermentation process of dough before baking. The release of carbon dioxide causes the dough to leaven, increasing its volume by 2-2.5 times. Proofing should be carried out in an atmosphere with a temperature of 33-40 degrees Celsius and a relative humidity of 75-80%.
Proofers are designed for proofing quick-frozen semi-finished yeast dough products. They are used in low-power bakeries in conjunction with SMEG, Unox, Enteco, and other European ovens of the same format. The cabinet is equipped with a simple steam humidification system and smooth temperature control. Water is poured into a pull-out tray with a sponge in the soft part of the proofer; a heating element located underneath heats the water in the tray and causes it to evaporate, creating a humid and warm environment inside the cabinet, necessary for the proofing of yeast products. During proofing, semi-finished products are kept in the proofer for 60 minutes at a temperature of 40-45 degrees Celsius; during this time, the yeast products "rise," increasing in volume by approximately 1.5-2 times.
The door is made of stainless steel with magnetic locks and special heat-resistant plexiglass, preventing mechanical and thermal damage. It features a steam humidification system and a stainless steel frame. The oven easily installs on a proofing cabinet.
