Description. Unox XL 195-B Proofing Cabinet
The cabinet is NEW. Without factory packaging. The cabinet is no longer in production, we recommend an equivalent. For furnaces XF 195 - XF 185 - XF188. Unox specializes in producing a wide range of affordable convection ovens and proofing cabinets for ovens. Proofing is a controlled fermentation process of dough before baking. The release of carbon dioxide causes the dough to leaven, increasing its volume by 2-2.5 times. Proofing should be carried out in an atmosphere with a temperature of 33-40 degrees Celsius and a relative humidity of 75-80%.
