Description. Proofing cabinet for 9 trays (435x340/460x330 mm) mini1
The 9-tray proofer is equipped with guides (upon prior arrangement) for a 435x340mm or 460x330mm baking tray. This proofer is suitable for both small domestic convection ovens and ovens from foreign manufacturers, such as Unox (Italy) , models XF 023 Anna , XF 133 Arianna (with steam) , XF 135 Arianna (with steam) , as well as Smeg (Italy) , models ALFA 41 and ALFA 41 V1. Proofing is a controlled fermentation process of dough before baking. The release of carbon dioxide causes the dough to leaven, increasing its volume by 2-2.5 times. Proofing should be carried out in an atmosphere with a temperature of 33-40 degrees Celsius and a relative humidity of 75-80%. Proofers are designed for proofing quick-frozen semi-finished yeast dough products. They are used in low-power bakeries in conjunction with SMEG, Unox, Enteco, and other European ovens of the same format. The cabinet is equipped with a simple steam humidification system and smooth temperature control. Water is poured into a pull-out tray with a sponge in the soft part of the proofer; a heating element located underneath heats the water in the tray and causes it to evaporate, creating a humid and warm environment inside the cabinet, necessary for the proofing of yeast products. The door is made of stainless steel with magnetic locks and special heat-resistant plexiglass, preventing mechanical and thermal damage. A steam humidification system is included, and the frame is made of carbon steel. The oven easily installs on a proofing cabinet. The set proofing temperature is maintained automatically. Visual monitoring of the process is easy, as it is carried out through glass doors. The equipment's design ensures uniform temperature distribution throughout the cabinet. The height between the tray guides is 80 mm.
The price does not include the cost of the baking tray. The price of a 435x340 black steel baking tray is 250 UAH.
