    Description. APACH APE12AB Proofing Cabinet

    Proofers from the Italian brand Apach appeared on the Ukrainian market only last year, but have already become quite popular. They are widely used in the fast food market due to their reliability and safety.

    Proofing is a controlled fermentation process of dough before baking. The release of carbon dioxide causes the dough to leaven, increasing its volume by 2-2.5 times. Proofing should be carried out in an atmosphere with a temperature of 33-40 degrees Celsius and a relative humidity of 75-80%.

    Apach proofers are designed for proofing quick-frozen semi-finished yeast dough products. The Apach proofer is used in low-capacity bakeries in conjunction with Apach ovens of the same format. The cabinet is equipped with a simple steam humidification system and smooth temperature control. Water is poured into a pull-out tray with a sponge at the bottom of the proofer; a heating element located below heats the water in the tray and causes its evaporation, creating a humid and warm environment necessary for proofing yeast-based products. During proofing, semi-finished products are kept in the proofer for 60 minutes at a temperature of 40-45 degrees Celsius; during this time, the yeast-based products "rise," increasing in volume by approximately 1.5-2 times.
