Thanks to the simplicity of these ovens, there's simply nothing to break—UNOX units contain 4-5 times fewer components than similar models from other manufacturers, significantly reducing their cost and significantly increasing reliability. The design minimizes the number of complex stamped stainless steel parts.
The steam source is a heating element and a turbine with a rotation speed four times higher than that of traditional combi steamers. The patented STEAM.Maxitm system generates steam at a temperature well below the typical 100°C. UNOX combi steamers' patented DRY.Maxitm system not only ensures a crispy crust on food but also releases steam before opening the door to prevent burns.
The originality of UNOX combi steamers is evident in the door design, which incorporates the Protek.SAFE™ feature. While the temperature inside the oven reaches 260°C, the temperature of the outer glass is only 40°C. Another advantage of UNOX combi steamers is the semi-automatic cleaning function. Simply set the humidity control to "100 percent" and the temperature control to "80 degrees," and the combi steamer will steam the walls inside the oven.
UNOX combi steamers are simply indispensable when there is no possibility of connecting to the water supply and sewerage system (with the additional DSP PUMP option, you can supply water into the chamber from any container).
Convection steam ovens allow operation in the following 3 modes:
• steam at a temperature of +105°C;
• convection without the use of steam;
• convection with added steam.
The “cool touch” system uses natural air convection inside the door glass to prevent overheating.
The hinged glass door allows for easy sanitary and hygienic cleaning of the oven interior.
The "venturi" system is a forced, short-term or long-term ventilation of the oven chamber with atmospheric air to dramatically reduce humidity within the oven (without opening the door). This function is designed to create a crispy crust on foods cooked in convection mode, as well as to release steam before opening the door to prevent a sudden burst of steam.
