    Designed exclusively for use with all KitchenAid Home Stand Mixers

    Your safety and the safety of others is very important.

    Below are important safety guidelines for using this appliance. Please read these instructions carefully before using the appliance.

    This is a safety warning sign.

    This sign warns you of possible actions, the consequences of which may pose a threat to your life and the lives of others.

    All safety precautions are indicated by this symbol, followed by the word “DANGER” or “WARNING.” These words mean:

    IMPORTANT SAFETY MEASURES

    When using electrical devices, basic safety precautions should always be followed, including the following:

    1. Read all instructions.

    2. To protect against potential risk of electric shock, do not place the mixer in water or other liquid.

    Attaching an Accessory to a Stand Mixer

    Before attaching an accessory to a stand mixer

    1. Set the mixer speed control to “0” (OFF).

    2. Unplug the mixer from the wall outlet or turn off the power.

    3. Depending on the connection type, either lift the cover or loosen the connection handle (A) by turning it counterclockwise and remove the accessory connection block cover.

    4 Insert the accessory handle (B) into the connection socket (C), making sure that the connection socket's mains handle fits into the square socket.

    5. Twist the accessory back and forth as needed. When the accessory is in the desired position, the end of the handle will fit into the groove on the coupling rim.

    6. Tighten the fastening knob until the accessory is securely attached to the mixer.

    MEAT GRINDER

    Assembling the Meat Grinder

    1. Insert the screw (A) into the meat grinder body (B).

    2. Place the knife (C) on the square shaft of the protruding part of the screw.

    3. Place the grid (D) on the knife so that the grid projections fit into the grooves on the meat grinder body.

    4. Place the ring (E) on the body of the meat grinder and screw it on firmly, but do not tighten it.

    Note: The pusher/wrench combination (F) is only used to loosen the ring (E). Do not use it to tighten the ring (E).

    Note: A juicer (Model 5FVSP) is available to convert the meat grinder into a juicer. A sausage stuffer (Model 5SSA) is available to convert the meat grinder into a sausage stuffer.

    Using a meat grinder

    1. Cut the food into small strips or pieces and place them in the hopper. Meat should be cut into narrow strips.

    2. Turn the mixer to speed 4 and feed the meat using the pusher/wrench combination.

    Note: When grinding large quantities of juicy ingredients, such as tomatoes or grapes, there may be a lot of liquid in the hopper. To drain the liquid, run the grinder for a longer period. To avoid damaging the mixer, do not process other ingredients until the liquid has drained from the hopper.

    Coarse Grate – Use for grinding raw or processed meats, hard vegetables, dried fruits and cheese.

    Fine Grate – Use for grinding raw or cooked meats into spreads and breadcrumbs.

    Grinding the meat – To ensure it mixes better and is ground into a finer powder, grind it twice. It's best to grind the meat cold or partially frozen. Fatty meats should be ground once.

    Grinding bread – To grind bread into crackers, make sure the bread is either thoroughly dried in the oven and free of moisture, or not dry at all. Partially dry bread can clog the grinder.

    Note: Very hard, dense foods, such as dry homemade bread, should not be ground in a grinder. Homemade bread should be ground fresh and then dried in the oven or air-dried.

    Unscrewing the ring - If the ring is too tight and cannot be unscrewed by hand, place a pusher with a key on its projections and turn it counterclockwise.

    Note: To avoid damaging the meat grinder, do not use a pusher with a key to screw the ring to the body.

    Washing the meat grinder

    First, completely disassemble the meat grinder.

    The following parts are dishwasher safe:

    • Frame

    • Screw

    • Ring

    •Pusher/key combination

    The following parts should be hand washed in warm soapy water, then dried thoroughly:

    • Knife

    • Grilles

    Caution! Rotating planes

    Always use a pusher.

    Keep fingers away from holes.

    Do not give to children.

    Otherwise, you may damage your fingers.

    WIPE

    Assembling the wiper  

    1. Insert the thinner end of the spring rod assembly (A) into the hole of the large screw (B) until it locks into place.

    2. Insert the screw into the meat grinder body (C).

    3. Attach the juicer cone (D) to the protruding end of the screw so that the protrusions on the cone fit into the grooves in the meat grinder body (C).

    4. Place the ring (E) on the body of the meat grinder and screw it on firmly, but do not tighten it.

    Note: The pusher/wrench combination (F) is only used to loosen the ring (E). Do not use it to tighten the ring (E).

    5. Place the juicer tray (G) over the cone and slide onto the top of the ring.

    6. Place the splash guard (H) on the juicer tray (G).

    Using a wipe

    1. With the Puree attached to the mixer, place the mixer bowl under the Puree tray to collect the squeezed juice and a smaller bowl under the open end to collect the waste.

    2. Cut the food into pieces to fit into the hopper.

    3. Turn the mixer to speed 4 and feed the ingredients using the pusher/key combination.

    Juicing Fruits and Vegetables  

    •Cut into pieces to fit into the hopper

    • Remove tough, thick peels, such as those from oranges

    •Remove any large indentations, such as those found in peaches

    •Remove cores or stems, such as from strawberries and grapes

    • Before juicing, process hard or tough vegetables and fruits

    Note: When grinding large quantities of juicy ingredients, such as tomatoes or grapes, there may be a lot of liquid in the hopper. To drain the liquid, run the grinder for a longer period. To avoid damaging the mixer, do not process other ingredients until the liquid has drained from the hopper.

     

    Caution! Rotating planes

    Note: To avoid damaging the purée and/or blender, do not process wild grapes or varieties with slippery skins, such as Concord, Catawba, and Ontario. Only varieties from the Ninifera family, such as Tokay and Thompson Seedless, can be processed.

    Some foods may leave stains on some parts. These stains can be removed using one of the following methods: (1) Place dishwasher-safe parts in the machine and use the normally soiled cycle. (2) Rub the stains with a small amount of oil or grease, wash in warm soapy water, and rinse. You can use a small brush to remove any residue from the cleaning cone.

    Unscrewing the ring - If the ring is too tight and cannot be unscrewed by hand, place a pusher with a key on its projections and turn it counterclockwise.

    Note: To avoid damaging the grinder, do not use a pusher with a key to screw it to the grinder body.

    RECIPES

    Smoked salsa

    4 large tomatoes, peeled and cut into 6 pieces

    1 or 2 smoked chili peppers (chipotle)

    1 medium onion, cut into 6 pieces

    1 garlic

    80 ml (1⁄3 cup) vinegar

    1 teaspoon (5 g) chili

    Assemble a meat grinder with a large grate.

    Attach to a mixer, turn on speed 4, and chop the tomatoes, pepper, onion, and garlic in a large bowl or saucepan under the grinder. Add the remaining ingredients and mix well. For a thicker salsa, bring to a boil. Once boiling, simmer over low heat for 5-10 minutes or until desired consistency.

    Tip: Chipotle peppers are dried, smoked chili peppers. If you don't have them, substitute fresh chili peppers with 2 tablespoons (10 ml) of barbecue sauce.

    Yield: 20 servings (30 ml [2 tablespoons] per serving).

    Swedish meatballs with white sauce  

    500g (1 lb) boneless beef steak, cut into 1-inch (2.5 cm) strips

    250g (1⁄2 lb) boneless veal, cut into 1-inch (2.5-cm) pieces

    1 medium onion, cut into 6 pieces

    2 slices whole wheat bread, broken into pieces

    1 teaspoon (5 g) salt

    1 teaspoon (5 g) nutmeg

    1/2 teaspoon (3 g) cloves

    1/2 teaspoon (3 g) black pepper

    60 ml (1/4 cup) skim egg powder or 1 egg

    120 ml (1⁄2 cup) low-fat milk

    White Sauce

    60 ml (1⁄4 cup) meatball juice or margarine or butter

    60 g (1⁄4 cup) flour

    500 ml (2 cups) whole milk

    2 teaspoons (10 g) instant beef bouillon granules or 1 beef bouillon cube

    1/2 teaspoon (3 g) black pepper

     

    Assemble the meat grinder with a fine grate.

    Attach to mixer, turn on speed 4 and grind beef, veal, onion and bread into the bowl under the grinder.

    (Repeat grinding 1-2 times to make the mince even softer.) Add the remaining ingredients and mix well.

    Form the mince into 2.5-cm (1-inch) balls and place them on a 40 x 26 x 2.5-cm (16 x 10 1/2 x 1-inch) baking sheet. Bake at 230°C (450°F) for 15 minutes, or until golden and no longer pink in the center.

    While the meatballs are baking, prepare the white sauce.

    Heat the juice or melted margarine in a hot saucepan. Add the flour and stir until it bubbles. Gradually add the remaining ingredients. Cook over medium-low heat until thickened and bubbling. Pour over the Swedish meatballs.

    Serve meatballs as an appetizer or as a main dish with noodles.

    Yield: 20 appetizer servings (4 meatballs per serving) or 10 main course servings (8 meatballs per serving).

     

    Bolognese Sauce  

    30 ml (2 tablespoons) olive oil

    2 carrots, peeled and cut into 2.5-cm (1-inch) pieces

    2 stalks celery, cut into 2.5-cm (1-inch) pieces

    1 large onion, cut into 8 pieces

    20 g parsley leaves

    700g (1 1/2 lb) shredded beef f  

    250 g (1/2 lb) shredded pork

    3 cloves of garlic

    10 large ripe tomatoes, cut into 6 pieces

    1 teaspoon basil (5 g)

    1 teaspoon (5 g) oregano

    1 bay leaf

    1 teaspoon (5 g) salt

    1/2 teaspoon (3 g) pepper

    60 ml (1⁄4 cup) water

    60 ml (1/4 cup) dry red wine

    200 g (3/4 cup) tomato paste  

    Heat oil in a 30cm (12-inch) saucepan over medium heat.

    Add carrots, celery, onion, parsley, meat, and garlic. Fry for 20 minutes. Remove from heat and cool for 10 minutes.

    Assemble a meat grinder with a large grate.

    Attach to mixer, turn on speed 4 and pulse mixture into 5.7 l.

    Assemble the Purée. Attach it to the mixer, turn on speed 4, and puree the tomatoes. Measure out 950 ml (4 cups) of puree. Add the tomato puree and paste, basil, oregano, bay leaf, salt, pepper, water, and wine to the meat mixture. Cover and simmer over low heat for 1 hour.

    Output: 2 l

    Pesto sauce

    80 g (1/3 cup) fresh basil leaves

    40 g (1/6 cup) parsley

    2 cloves of garlic

    1 teaspoon (5 g) salt

    1⁄2 teaspoon (3 g) pepper

    100 g Parmesan cheese

    120 ml (1/2 cup) olive oil

    50 g (1/4 cup) pine nuts

    ( optional )

    Assemble the meat grinder with a coarse grate.

    Attach the mixer to speed 4 and chop the basil leaves, parsley, and garlic into the mixer bowl. Add salt, pepper, and Parmesan cheese. Attach the bowl and wire whisk attachments. Set the mixer to speed 6 and beat for 1 minute. Stop and scrape down the sides of the bowl. Set the mixer to speed 8 and gradually pour in the olive oil in a thin, continuous stream, beating until smooth. Use approximately 30 ml (2 tablespoons) of pesto sauce per serving of pasta.

    Tip: If you're not using the pesto sauce right away, store it in a jar and coat it with a thin layer of olive oil to prevent it from browning. Refrigerate for a week or freeze for longer storage.

    Yield: 500 ml (2 cups).

    Golden Peach Chutney  

    4 large peaches, peeled and cut into pieces, or 1 package (450 g (16 oz)) frozen peaches, thawed,

    120 ml (1⁄2 cup) vinegar

    1/2 onion, finely chopped

    60 g (1/4 cup) dried fruit

    120 g (1⁄2 cup) hard brown sugar

    60 g (1⁄4 cup) sugar

    40 g (2 tablespoons) finely chopped crystallized ginger

    4 or 5 cloves

    1⁄4 teaspoon (2 g) cloves

    Assemble the puree. Attach it to a mixer, turn on speed 4, and grind the peaches into a large saucepan under the grinder. Add the remaining ingredients. Bring to a boil. Reduce heat. Simmer for 20 minutes, or until thickened, stirring frequently.

    Yield: 24 servings (20g [1 tablespoon] per serving).

    Hummus

    1 can (565 g [20 oz]) chickpeas, drained

    60 ml (1⁄4 cup) cold water

    60 ml (1⁄4 cup) fresh lemon juice

    60 g (1⁄4 cup) tahini

    (sesame seed paste) or

    2 teaspoons sesame oil (10 ml)

    2 cloves garlic, finely chopped

    1 teaspoon (5 g) salt

    1/2 teaspoon (3 g) paprika

    (optional)

    Collect the pulp. Attach it to a mixer, turn on speed 4, and grind the chickpeas into the mixer bowl. Add the pulp to the squeezed chickpeas.

    Add water, lemon juice, tahini, garlic, salt and paprika.

    Attach the bowl and wire whisks. Set the mixer to speed 4 and beat for 1 minute. Stop and scrape down the sides of the bowl. Set the mixer to speed 10 and beat for 1 minute until smooth. Serve with pita bread.

    Yield: 475 ml (2 cups).

    Apple Jam

    1.5 kg (3 lb) ripe apples, quartered

    200 ml (3/4 cup) apple cider

    120 ml (1⁄2 cup) vinegar

    450 g (2 cups) sugar

    2 teaspoons (10 g) cinnamon

    4 cloves

    1 1/2 teaspoons (8 g) cloves

    Place the apples, cider, and vinegar in a large saucepan or clay pot with a lid. Simmer over medium heat for about 15 minutes or until softened, stirring occasionally.

    Assemble the juicer. Attach it to the mixer, turn on speed 4, and pulse the apples into the mixer bowl under the grater. Return to the saucepan. Add the sugar and spices and mix well. Reduce heat to low, stirring constantly until the sugar dissolves. Simmer for another 15-20 minutes, or until thickened, stirring frequently. Pour into hot, sterilized 235 ml (½-pint) jars. Place in boiling water for 10 minutes. Remove the jars from the water. Cool and check for leaks.

    Yield: about 1.2 L (5 cups) (10 ml [2 teaspoons] per serving).
