Smooth grilling surfaces are recommended for grilling tender meats, poultry, seafood, and eggs. The thin film of fat that forms on the surface prevents the delicate crust of the fried food from sticking to the grill surface. Ribbed grilling surfaces are preferable for grilling larger pieces of meat or poultry, which require longer cooking times. They cook better and prevent burning. Models with single and dual heating zones feature independent temperature control, allowing you to cook food on one surface while finishing it on the other. The grilling surface is equipped with a rim around the perimeter to prevent fat from splattering. The fat produced during frying is collected in a removable drip tray.
