The MINITEMPER chocolate tempering machine by Pavoni is a compact tabletop machine designed for preparing chocolate glazes. The removable bowl allows for quick preparation of various glaze mixtures without the need for two or more glaze machines. display; 5 work programs; electronic thermostat allows you to regulate the temperature from +20 to +60 C (3-stage regulation); a stream of warm air is used as a heat source. In melted chocolate, the fatty acid molecules of cocoa butter are arranged randomly and in constant motion. When chocolate is cooled without proper cooling, the molecules form a loose structure of unstable crystals, resulting in soft and sticky chocolate. When chocolate is cooled properly, the molecules form a regular structure of stable crystals, resulting in a hard and crunchy chocolate. To obtain stable cocoa butter crystals, the chocolate must be heated above the melting point of all crystals—to 45-50°C—and then cooled in one of two ways. The first is to cool all the chocolate to 32°C and add pre-tempered (hard) chocolate, which will act as a seed for crystallization.
