The Unox XEEC1011EPR EVEREO 600 heated drawer features a closed heating unit and automatic temperature control. The cabinet and door walls maintain the set temperature. Wheels are included for easy portability.
The equipment is convenient for sanitization.

Preservation at 63 °C
Most foods can be safely stored using EVEREO®'s lower storage temperature of 63°C. For example, you can store dishes like soup, meat, fish, vegetables, pasta, and desserts, as well as all those sauces that typically take up time and space in the kitchen: with EVEREO®, you can truly have a ready-to-serve line.
Store at 70°C
The highest temperature is ideal for preserving fiber-rich vegetables or meats containing high levels of connective tissue. These dishes not only preserve perfectly, but even improve their organoleptic properties: the toughest connective tissue acquires a soft, gelatinous consistency, as in octopus, while vegetables become almost creamy. Therefore, the 70°C preserving program is optimal for preparing dishes with medium to long cooking times.
