Description. Confectionery table SB 1400x600 with shelf

The SB 1400x600 prefabricated pastry table with a wooden tabletop and a lower shelf is designed for use in a pastry shop for rolling out dough and preparing bakery and confectionery products on it. Prefabricated pastry production tables are identical in appearance, strength, and performance to welded, traditional production tables. However, their design allows for the elements that take up a lot of space in traditional tables to be delivered disassembled and assembled on-site. Assembly takes no more than a few dozen minutes and can be accomplished by a low-level technician. When folded, the table is an average of 150 mm high, with the same width and length as a welded table. This reduces the product's volume by more than five times for transportation. Shipping companies calculate the cost of such products based on volume. Consequently, even with a light table, shipping costs for industrial tables can be substantial. Shipping costs can sometimes amount to half or even the entire cost of the product itself. This prefabricated solution allows for significant savings on shipping costs. The pastry department stands apart from any other department in a professional kitchen, as dough itself is a specialized product that requires a unique approach. Proper dough processing requires certain requirements: a certain temperature; absence of excess moisture; oxygen saturation. Tables with wooden tops provide these conditions best. The top is made of laminated oak or ash. The surface is durable, smooth, yet non-slip, and able to absorb moisture just enough. Wood, a poor conductor of heat, maintains the optimal temperature, which promotes natural fermentation and gluten formation.
